2 (8 inch) pie shells, baked
2 1/2 quarts fresh strawberries
2 cups white sugar

4 tablespoons cornstarch
2 cup water
2 (3 ounce) package strawberry flavored Jell-O(R)

Directions:
Directions:
In a saucepan, mix together the sugar and corn starch; make sure to whisk corn starch in completely. Add water, bring to a boil and cook over medium heat until mixture thickens.
Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temperature.

Place strawberries in baked pie shells; position berries with points facing up. Pour cooled gel mixture over strawberries.

Refrigerate until set. Serve with whipped cream, if desired.

I just add water and bring it to a boil. Works for me.
