2 quarts of red potatoes
6 slices of bacon
1 1/4 water
3/4 cup white vinegar
1 cup sugar
1 1/2 Tbsp cornstarch
1 tsp salt
Dash of black pepper
1 medium onion - diced
2 Tbsp bacon grease

Directions:
Directions:
Cook your potatoes.
Cool potatoes, peel potatoes, slice potatoes.
Brown your bacon in a skillet. Cool, set aside.
Mix the sugar with cornstarch
Now mix in a bowl the water, vinegar, sugar and cornstarch mixture, salt and pepper, diced onion and bacon grease.
Pour over the potato slices. Carefully mix, try not to break up the potatoes too much.
Allow to stand at least one hour to blend the flavors.
Serve hot or cold
