4 egg whites
2 c. sugar
1 c. oil
3½ c. flour
1 c. rasins
1 tsp. vanilla
1½ tsp. baking soda
1½ tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
2½ c. grated zucchini
1 c. chopped walnuts

Directions:
Directions:
Beat eggs. Add sugar. Beat. Add oil. Combine dry ingredients and add alternately with zucchini. Stir in vanilla, walnuts, and rasins. Bake @ 350º for 55 minutes for large loaves (2) or 40 minutes for small loaves (5). Let stand 10 minutes to cool.
