Salmon fillet, skin-on, about ½ lb per person
Orange marmalade
Soy sauce
Ginger
Garlic
Red pepper flakes

Directions:
Prep: Rinse and pat dry salmon. Tease out any pin bones that seem annoying with tweezers or pliers.
Glaze: Stretch out salmon on a lightly oiled broiler pan.
Melt a few spoonfuls of marmalade in the microwave and brush it across salmon.
Shake on soy sauce generously.
Finely chop a little fresh ginger and garlic and scatter across the salmon.
Shake on a bit of red pepper.
Broil: Slide glistening fish into the broiler about 5 inches from the flame. Broil until just done [about 8 minutes]. Flesh will be flaky at the surface and bright pink inside.
Serve: Cut salmon into wedges. Lift each off the skin. Set a wedge of salmon alongside a mound of rice, letting the two dishes complement, rather than compete with each other.
