Pastry for Fish Pie:
1½ cup all purpose flour
3 T granulated sugar
½ tsp fine sea salt
1 tsp baking powder
6 T cold unsalted butter
½ cup cold whole milk or as needed

Ingredients for Fish Pie:
1 9" unbaked pie shell
1 pint jar canned salmon
1 cup finely chopped celery
3 T chopped onion
2 T chopped bell pepper, yellow, red, or orange
2 eggs
2 T fresh lemon juice
1 cup mayonnaise
2 tsp chili oil
1 cup grated cheddar cheese, divided
1 can chopped water chestnuts, optional
1 cup Panko

Sauce for Fish:
1 to 2 tsp chili oil
½ cup mayonnaise
½ cup catsup

Directions:
Directions:
Mix sauce for fish and store in refrigerator until ready to serve.

Mix together salmon, celery, onion, bell pepper, eggs, lemon juice, mayonnaise, water chestnuts, ½ cup grated cheese and chili oil, Pour into prepared pie shell and cover with remaining ½ cup of cheese and Panko.
Bake at 375º for 45 minutes to 1 hour. Let rest 15 minutes.
Serve with prepared fish sauce.
