1 cup sugar
1/4 cup cornstarch
1/4 cup + 2 Tbsp unsweetened cocoa powder
1/8 tsp salt
4 cups heavy cream
2 large eggs yolks, lightly beaten
2 tsp vanilla

Directions:
Directions:
In a saucepan, stir together sugar, cornstarch, cocoa powder, and salt. Gradually whisk in the cream and egg yolks.
Place over medium heat and cook, stirring frequently, until mixture comes to a boil, about 20 minutes. Simmer, stirring constantly, for 1 minute, then remove from heat and stir in vanilla.
Transfer pudding to a serving bowl, cover and refrigerate until well chilled.

*For a light version, use 1% milk in place of heavy cream and increase cornstarch to 1/4 cup + 1 Tbsp.
