Sauce:
1 cube butter
4 T flour
1 qt half & half
Vege:
3-4 lg leeks, sliced thin (use most of tops)
3 c finely diced potatoes
1 c finely chopped celery
1 c chopped carrots (optional)
4 c chicken stock or 5 chicken bouillon cubes with 4 c water

Sauce:

1. Melt butter, add flour, and half & half. (freezes well for future use)

Vege:

1.Simmer vegetables and broth for 20-30 min or until cooked.
When cooked add to sauce slowly. Do Not Boil. Season to taste.

We make this for every Christmas Eve dinner. It is a great easy soup. Goes well with homemade potato rolls rolled like crescent rolls.
