EASY Beef Enchiladas Recipe

1 lb. ground beef
1 cup chopped onion
1 small can tomato sauce
1 pkg. taco seasoning
1 can refried beans
1 can cream of anything soup (chicken, celery, mushroom)
2 cans enchilada sauce (heat level to your preference)
3 cups cheddar cheese, grated (you might like more)
Flour Tortillas (i buy a pack of 20 but usually don't use quite all of them)

Preheat oven to 350º 9 x 12"-inch baking dish

Brown beef and onion and drain off any grease. Stir in tomatoes, sauce and taco seasoning. When combined stir in the refried beans and mix completely.

Remove skillet from heat and place about two wooden spoonful's into a tortilla. You can add some cheddar cheese at the point if you like. I do because it makes them better!

Place the filled tortillas seam side down in to a 9 x 12"-inch baking dish.

After the enchiladas are made, in a separate bowl, using a whisk I mix the cream of "your choice" soup and the enchilada sauce. Pour over the top of the enchiladas and sprinkle with cheddar or any other cheese you like. I've used Pepper Jack and it was great!

Cover and bake in 350º oven for about 30 minutes. For the last 5 minutes, uncover the enchiladas and let the cheese brown.
