3 lbs. potatoes
4 large eggs
3 T. white vinegar
⅓ cup olive oil
black pepper
minced chives or red onion
1 bottle roasted red peppers, diced
½ cup stuffed pitted green olives
diced green pepper
optional: add a bit of Hellmann's Real Mayo



Directions:
Directions:
Boil potatoes in water for about 10 minutes.
Cook eggs separately until hard boiled - abt. 10 min.
When potatoes are tender, let cool and add to a bowl.
Add vinegar and olive oil, salt and pepper to taste.
Cut eggs into quarters and add with the olives,
roasted peppers, green pepper, onion.
Stir gently.
