3 bunches of fresh broccoli
4-6 ounces pancetta, chopped
balsamic glaze
Parmesan cheese
olive oil

Directions:
Directions:
Wash broccoli and cut of tops, dividing into florets. Steam broccoli in the microwave to desired crispness. Fry pancetta in a skillet. Remove pan from heat. Stir in the steamed broccoli and a couple of tablespoons of olive oil. Stir well to coat broccoli and add more olive oil if desired. Drizzle with balsamic glaze and stir again - the amount of glaze used is up to your taste. Sprinkle with Parmesan cheese and serve.

Prosciutto may be substituted for the pancetta (if you live in a town like Oxford where the grocery stores do not carry pancetta!) Also, this recipe works well with brussel sprouts.
