1 ½ cups cottage cheese (small or large curd) I just use the whole pint
⅓ cup white flour
3 eggs
Pinch of salt
1 Tbsp. melted butter

Directions:

Mix ingredients together and spin the your blender to mix. Allow to rest 10- 15 minutes. On a lightly greased nonstick griddle or skillet cook them on med heat till lightly browned.

I hate cottage cheese, but these come out a cross between a crepe and a blintz and are actually pretty health and nutritious. Even the men in our family like them with a syrup or fruit compote.
