1 cup luke-warm milk
1 large egg
2 tbsp melted butter or sunflower oil (plus butter/oil for the skillet)
1 cup all-purpose flour
2 tsp baking powder
2 tbsp sugar
1 pinch of salt

Directions:

1. Pre-heat your oven to 200 F / 90 C

2. In a small bowl, sift together all dry ingredients

3. In a medium bowl, whisk together the wet ingredients

4. Slowly pour the dry ingredients into the milk mixture and stir with a fork (do not over-mix!). Leave to stand for 10 mins.

5. Heat a large skillet or griddle over medium heat and generously coat with the oil.

6. Use a small ladle to pour the batter onto the skillet into your preferred size pancakes. The standard diameter is about 4 inches, about cup of batter per pancake. Cook until the surface has some air bubbles, then flip over with a spatula and cook another 1-2 mins until light brown on the underside.

7. Transfer pancakes to a heatproof platter, cover with foil and keep warm in the oven until serving. Repeat until all batter has been used up.

Enjoy drizzled with maple syrup.

Weekend in the United States means American pancakes for breakfast. A stack of 3 fluffy pancakes at least 1 cm think, drizzled in maple syrup and topped with blueberries, served with some crispy bacon on the side, coffee and orange juice equals one happy family.
