2 Lbs boneless chicken breasts
3/4 Cup freshly grated parmesan
1 1/4 Cup Italian style bread crumbs
1 Cup (or less) Dijon mustard
3 Eggs
1/2 Cup milk
1 Cup margarine

Directions:
Directions:
If chicken pieces are more than 3/4” in height, slice to half height.
Mix grated parmesan with bread crumbs in large dish.
Make egg batter with 3 eggs and 1/2 cup milk in large dish.
Put mustard in another large dish.
Melt 2 Tbls of margarine in a Teflon fry pan on med. heat.
Place chicken in egg batter and leave for 30 to 60 seconds, then transfer it to mustard coating lightly, then transfer to crumb mixture coating generously. FryChicken 4 - 5 minutes or until light brown.

Maintain margarine level in fry pan while cooking.
