1 pound shrimp, peeled and deveined
3 tbsp olive oil
3 tbsp chopped fresh cilantro
2 tbsp fresh lime juice
2 cloves garlic, minced
2 tsp tequila
1/4 tsp cayenne pepper
1/4 tsp salt

4 bamboo skewers, soaked in water for 20 minutes

1. Stir shrimp, olive oil, lime juice, garlic, tequila, cayenne pepper, and salt together in a bowl. Cover the bowl with plastic wrap and refrigerate shrimp in marinade for 30 minutes to 3 hours.

2. Preheat an outdoor grill for high heat and lightly oil grated. If making in the oven, preheat the oven to 350 degrees. Cover a cookie sheet with foil.

3. Remove shrimp from bowl and thread onto skewers; discard marinade. Cook on the preheated grille until shrimp turn pink, 2 to 3 minutes per side.

If making in the oven, place shrimp on cookie sheet. They should not be touching each other. You can spoon marinade over the shrimp. Bake in the oven until the shrimp is pink - about 5 to 6 minutes. No need to turn. If you want a little "crispy" you can place them under the broiler for about a minute.

You can adjust the amount of cayenne pepper to make the shrimp spicier of you like. This marinade is also good on chicken.

We made it with bottled lime juice, and, although good, the fresh lime juice just gives the shrimp that extra "tang" so use fresh lime juice whenever possible.
