6 large jalapeno peppers
12 slices of bacon (thin is fine)
8 oz. cream cheese (softened)
1/2 c. grated sharp cheddar cheese
1/2 t. minced garlic
1/2 t. cumin (if you like cilantro chop a T. or so of that and use instead)

Directions:
Directions:
Put on gloves. Wash peppers. Slice in half lengthwise. Remove seeds. Mix together cream cheese, cheddar cheese, garlic, and cumin (or cilantro). Fill peppers with cream cheese mixture. Wrap a slice of bacon around the pepper and close with a toothpick. Heat oven to 400. Line a cookie sheet with foil. Place a rack on the cookie sheet. Place peppers on rack. Bake for 15-20 minutes until bacon is done (longer if needed). Can also be cooked on the grill.
