1 lb boneless, skinless chicken breasts cut into chunks
2 TB vegetable oil
1.5 c barbecue sauce (I like Sweet Baby Ray's original)
1 c water
1 can whole kernel corn (drained)
1 small green pepper, diced
2 c uncooked rice (I prefer white rice---brown rice just doesn't taste right in this recipe)

1. Brown chicken in hot oil in large skillet on medium-high heat.
2. Stir in barbecue sauce, water, corn, and pepper; bring to a boil. Reduce heat, cover, and simmer about 5 minutes.
3. Stir in rice; cover. Remove from heat. Let stand 5 minutes.
4. Serve----add barbecue sauce for the right level of "sauciness."
