Garlic Prime Rib Recipe

10 pound prime rib roast
10 cloves minced garlic
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons dried thyme
rosemary if desired

Directions:
Directions:
Place roast in roasting pan with fatty side up.
Mix together garlic, olive oil, salt, pepper, thyme and rosemary.
Spread mixture over roast and let sit at room temperature for 1 hour.
Preheat oven to 500 degrees.
Bake roast for 20 minutes, then reduce temperature to 325 degrees.
Continue roasting for 60-75 minutes, internal temperature should read 145 degrees for medium rare.
Rest for 10-15 minutes before carving.
