Ingredients:  
Ingredients:  
1 ½ c. Salt Pork (or bacon)
1 clove Garlic (1 T. chopped)
1 c. uncooked Rice
2 c. Water
½ c. chopped Onion
2 large cans Tomatoes
1 t. Salt
1 c. each of two or more of the following: Raw peeled Shrimp, Oysters, Sausages, Chicken

Optional:
1 pinch Oregano
1 pinch Cayenne Pepper

Directions:
Directions:
Dice and fry Salt Pork slowly until crisp, add Onion and Garlic, cook until soft. Add tomatoes, simmer until thick. Add rice, salt and water, cover and cook 10 minutes. Add meats, cover and cook until Rice is done; add oregano and cayenne during simmer. Note: Shrimp and Oysters should be added during the last 3-4 minutes of cooking.
