Banana Cake Recipe

1 yellow cake mix
4 eggs
cup buttermilk
1 tsp baking soda
cup oil
1 cup coconut
3 large ripe bananas; mashed
1 tsp vanilla

1 box powdered sugar
1 - 8 oz cream cheese
1 stick butter; softened
1 Tbsp milk; if needed for consistency

Preheat to 325 Prepare 3 round cake pans

Mix cake mix, eggs, buttermilk, baking soda oil coconut bananas and vanilla. Stir until well combined.

Pour into 3 cake pans, bake at 325 for 20 - 25 minutes.

Remove and cool completely.

Once cooled make the Icing:

Cream together cream cheese and butter; add powdered sugar by large spoonfulls. Mix until creamy and can be spread over cakes. Use enough milk to get the desired consistency, be careful, it is easy to add too much milk.

Spread over all three layers and stack togehter; spread over entire top and sides.
