"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
1 can White Albacore Tuna
1 boiled egg peeled and diced
¼ large red or white onion diced small pieces
¼ cup sweet pickle relish
½ teaspoons mustard
1 heaping tablespoon mayonnaise or Miracle Whip
salt and pepper to taste.

Directions:
The key to this tuna salad is to mash and drain all liquid off of tuna. I open can and leave metal lid loose on the can and press the lid into tuna, mashing out all liquid. Peel egg and dice into medium-sized pieces. Add the rest of the ingredients into the bowl with the tuna and diced egg. Mix all ingredients together. Salt and pepper to taste. Serve as salad or in a sandwich. Grilled tuna sandwiches were a specialty of the old Bush drug store when I was growing up. To serve as grilled tuna, butter two slices of bread and grill in skillet on the stove remove and add tuna.
