4 medium-sized Vidalia onions
8 oz pepper jack cheese
8 oz cream cheese.
1 cup mayonnaise

Directions:
Directions:
Grate cheese in a food processor. Set aside. Clean onions and chop in food processor. Combine the onions, cheese, cream cheese and mayonnaise in the food processor. Bake in preheated oven at 350F in an oiled casserole dish until mixture is bubbly and browning. Serve hot with tortilla chip scoops.

Vidalia is a copyrighted term applied to several varieties of sweet onions grown in a specific geographical region of Georgia surrounding the town of Vidalia, where the soil is particularly low in sulfur -- the component that makes most onions sharp and pungent. The different varieties are unusually sweet compared to other onions.
