1 c (about one sleeve) crumbled Ritz crackers
1/2 stick (4 T) margarine or butter, melted
2 c diced onions
1 T margarine or butter
2 large eggs
3/4 c whole milk
Salt, to taste
Pepper, to taste
Red pepper, to taste
Paprika, to taste
Sprinkle of real bacon bits
1/2-to-1 c grated cheddar cheese

Directions:
Directions:
Mix cracker crumbs with margarine and press into an eight-inch pie plate or casserole dish. Sauté onions in one tablespoon of margarine until translucent but not brown (can do in microwave). Spoon cooked onions into crust. Season to taste. Mix eggs and milk and pour over. Sprinkle with cheese. Bake at 350°F for about 30 minutes or until set and browning. Great for Brunch!
