2 cups all purpose flour
1 Tablespoon baking powder
¼ cup sugar
¼ teaspoon salt
2 eggs ½ cup canola oil
1½ teaspoon vanilla
For Cinnamon Sugar muffin: sprinkle tops with 1 Tablespoon cinnamon mixed with 3 Tablespoons sugar.
For Blueberry Streusel: Stir in 1 cup blueberries into batter and top muffin with streusel (¼ cup flour, ¼ cup packed brown sugar, ½ teaspoon cinnamon, and 2 Tablespoon butter.
For: Oatmeal Raisin: Stir in 1 cup raisins and sprinkle top with rolled oats then bake.
For Raspberry Almond: Fill muffin cup ⅓ full, place 1 teaspoon seedless jam without touching edge of cup. Continue filling rest of muffin cup and top with slivered almonds and bake.
For Banana Chocolate Chip: Stir in 1 ripe mashed banana and ½ cup chocolate chips.
For Lemon Poppy seed muffins: Substitue 1 teaspoon lemon extract for vanilla and add 2 teaspoons poppy seeds.
For Apple Pie Muffin: Mix in 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ½ to 1 chopped apple.
For Pineapple Coconut Muffin: Add ½ cup shredded coconut and ¼ cup drained crushed pineapple into batter and bake. Sprinkle with a little coconut on each muffin.
