Easy Gumbo Recipe

Mae Mays/Boan


5 Tablespoons vegetable oil
6 Tablespoons flour
2 onions, finely chopped
1 pod of garlic
1 large can tomatoes, chopped
1 small can tomatoes, chopped
5 - 6 cups chicken broth
3 teaspoons salt
1 teaspoon pepper
2 pounds shrimp and/or crab
1 package frozen cut okra
1 pint oysters

Brown flour in bacon drippings to make roux. Add onions and garlic. Brown for 5 minutes. Add tomatoes, water, salt and pepper, and boil for one hour over medium heat. Add shrimp (or crab) and okra and cook 20 minutes longer. Stir well and serve with steamed rice.
