1/2 c apple cider vinegar
1/4 c extra light olive oil
1/2 c white granulated sugar
1 tsp poppy seeds
1/4 tsp salt
1/8 tsp fine ground black pepper
1/2 c green onions, chopped
3 c seeded watermelon balls
2 to 3 c thin-sliced pickling cucumbers

Directions:
Directions:
Whisk together the vinegar, oil, sugar, poppy seeds, salt and pepper. Combine melon, cucumbers and onions in a medium mixing bowl. Cover with the vinaigrette and toss gently to completely coat. Serve immediately or let sit about one hour at room temperature before serving. Refrigerate; bring back to room temperature to serve. VARIATION: Toss in 1/4 cup of crumbled feta cheese.
