"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 cake yeast

4-5 c. sifted flour

Directions:
Dissolve yeast in lukewarm water, scalded milk and add shortening, sugar, salt and mashed potatoes.
When mixture has cooled to lukewarm, add dissolved yeast. Mix thoroughly and add just enough flour to make a thin batter. Cover and set in warm place until dough doubles bulk. Add beaten eggs and stir in enough flour to make a stiff dough. Turn out on slightly floured board and knead thoroughly until smooth and pliable. Put into greased bowl large enough to allow for rising. Cover with clear cloth and set in cool place. When rolls are wanted, pinch off dough, shape and let rise until double in bulk (from
1½-2 hours). Bake in hot oven about 10-20 minutes.
