One tbsp. olive oil
1 large onion, chopped
1 red pepper, chopped
1 orange pepper, chopped
1 yellow pepper, chopped
2 cloves garlic, chopped
32 ounces vegetable broth
15 ounce jar pasta sauce
½ tsp. curry powder
½ tsp. roasted cumin
¼ tsp Mexican chili powder
¼ tsp cinnamon
15 ounce can cannellini beans, drained and rinsed
½ cup farro, cooked
⅔ cup peanut butter

Directions:
Directions:
Sauté onion in oil. Cook 7 minutes.
Add peppers and continue cooking for 5 minutes.
Add garlic, broth, pasta sauce, curry, cumin, chili powder and cinnamon. Cook 15 minutes to blend flavors.
Add beans, farro and peanut butter and continue cooking for 10 minutes.
