3 cups cooked wild rice
1 onion
1 rib celery
1 carrot
1 cup finely chopped ham
1/2 cup butter
1 cup flour
8 cups chicken broth
salt and pepper to taste
1 cup light cream or half and half

Directions:
Directions:
Prepare the wild rice. In a 4 to 5 qt. soup kettle saute finely chopped onion, carrot, celery, and ham in the butter for about 3 min. or until softened. Sift in the flour a little at a time, stirring and cooking until the flour is blended in well, do not let it brown. Slowly add the chicken broth, stirring until the flour, butter, vegetable mixture is well blended. Add the wild rice, adjust the seasoning as needed. Heat thoroughly, add the cream and heat gently but do not boil.
