½ lb imported Swiss cheese, shredded (Emmental) is recommended
½ lb Gruyere cheese, shredded
2 TBS cornstarch
1 fresh garlic clove, peeled
1 cup dry white wine
1 TBS lemon juice
Pinch of freshly grated nutmeg

Directions:
Directions:
In a small bowl, coat the cheeses with the cornstarch and set aside. Smash the garlic clove then rub the inside of the ceramic fondue pot with the garlic; leave the garlic in the pot. Over medium heat, add wine and lemon juice and bring to gentle simmer.

Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in the nutmeg

On a platter, arrange an assortment of bite sized dipping foods around the fondue pot such as Granny Smith apples, French bread cubes, cured salami, picked vegetables and sautéed mushrooms.
