2 lobster tails (8 to 10oz each) thawed
2 garlic cloves, minced
3 TBS olive oil
⅓ cup white wine
⅓ cup chicken broth
2 TBS tomato puree
½ tsp salt
¼ tsp pepper

1 cup fresh arugula or baby spinach, coursely chopped
2 TBS lemon juice
1 TBS grated lemon peel
8 oz pasta

Carefully remove raw lobster meat from shells, cut into 1 inch pieces and set aside

In a large skillet, sauté garlic in oil for 1 minute. Add, wine, chicken broth, purée, salt and pepper. Bring to a boil over medium heat. Reduce heat. Stir in lobster, simmer, uncovered for 5 minutes or until lobster is firm and opaque.

Meanwhile, cook pasta according to package directions. Drain pasta; add pasta to lobster mixture and toss to coat. Stir in the arugula or spinach, lemon juice and lemon peel. Cook for 2 minutes until greens are wilted. Garnish with cheese if desired.
