2 10 oz pkgs of Cracker Barrel Vermont Sharp white cheddar cheese ( green package)
12 oz light cream cheese softened
7 oz jar chopped or sliced pimentos, drained
1 lb mixed (green and black) deli olives (not from a jar or can)
⅓ cup olive oil
⅓ cup balsamic vinegar
¾ tsp dried oregano
¾ tsp dried basil
2 med, cloves garlic minced

Directions:

Mix oil, vinegar, garlic, oregano and basil. Let stand at room temperature while assembling cheese ring. Drain pimentos. Slice each cheese block into approx. 20-25 slices and spread generous amount of softened cream cheese, heavy on one side, pulling knife away to spread thinner on opposite side. This makes wedge like pieces and helps to form ring. Place cheese/ cream cheese wedges in 10” quiche dish with thickest side of cheese wedge pieces on outside of dish to form ring.

Put olives around the inside cheese ring: place drained pimentos mostly on top of cheese, a little on the olives.
Shake the dressing and pour over entire cheese ring and olives.

Refrigerate overnight. Serve with slices of French baguette thinly sliced.
