3 tbsp cold water
1 tbsp corn starch
1 tbsp molasses
1 cup vegan butter softened
1 tsp vanilla extract
1 cup white sugar
3/4 cup brown sugar
1 tsp salt
1 tsp baking soda
2 1/4 cups white spelt flour (amazon or other online stores have it) this is a key ingredient .do not substitute .This flour is healthier and superior to reg. white flour).Also creates a crispy texture.
1 bag vegan chocolate chips
1 cup walnuts(optional)

Preheat oven to 375 .Whisk the cornstarch.water and the molasses,set a side .Cream the butter and sugars and than add the vanilla ,Mix in the cornstarch mixture.Add the flour,salt and baking soda,Mix until flour is completely combined. Stir in the chips and nuts.Using a tbsp or cookie scoop, drop on a cookie sheet with some space in between,Bake 8 to 10 min.or until edges are browned .Cool on wire racks .Makes 3 dozen.
