Ingredients: 2 T. grapeseed oil 1 medium yellow onion, chopped 2 medium carrots, peeled and shredded, about 1 cup 2 pound lean ground turkey or beef 4 garlic cloves, minced or pressed 1 T dried oregano 2 tsp ground cumin ¾ t kosher salt 1 tsp black pepper 1 cup tomato paste ¾ cup water ¼ bunch cilantro (or parsley), roughly chopped 1 T pure paple syrup or honey 4 whole wheat hamburger buns ½ head green leaf lettuce, shredded (optional)
serve with watermelon or watermelon feta salad, ⅓ c feta, 6-8 leaves basil, dash black pepper

Directions:1. heat an pan over medium - high heat; add in oil if using turkey meat, and once hot, add onion and shredded carrots. Stir vegetables and sweat un til soft and translucent, 2-3 minutes.
2. Add in Ground turkey (beef), garlic, oregano, cumin, and salt & pepper. Sauté over medium heat until meat is browned and cooked through, 7-10 min.
3. In a small bowl, whisk together tomato paste and water.
4. Reduce heat to low-medium, add tomato paste/ water to pan, and stir to combine. Simmer for an additional 5 minutes.
5. Stir in cilantro (or parsley) and maple syrup into the remaining meat and toast buns. Fill each sandwich bun with ¾ c. prepared meat and handful of shredded lettuce.
Low carb version: serve sloppy joe mix over grilled zucchini or squash |

Notes: Landon hates the vegetables in this! So the best thing to do for a family of lovers and haters is to make this one night and the next time make a no vege sloppy joe. Take Turns. use leftovers for taco salads.
