Shari’s Roast Chicken Recipe

Roasting chicken
One orange
One onion cut in quarters
½ tsp salt
¼ tsp pepper
1 tsp rosemary
1 tsp thyme

3 TBS butter
3 TBS Dijon mustard
3 TBS honey
2 TBS orange marmalade
Heat top 4 ingredients on stove. Take off heat and add 3 TBS Grand Marnier

Preheat oven to 400º

Place chicken in roasting pan. Squeeze orange juice over chicken. Place orange rind and cut onion in the cavity of the chicken. Mix seasonings and rub on the chicken

Bake at 400º for 40 minutes.

Reduce temperature to 350º and roast for 70 minutes.
Glaze with the sauce last 30 minutes.
Serve rest of glaze with chicken.
