Bacon grease about ⅛- inch deep in iron skillet
3 heaping Tablespoons of all purpose flour
Salt and pepper
evaporated milk cup
milk Pour all at once into browned flour

Directions:
Directions:
Brown flour in bacon grease. Enough bacon grease to make smooth thin paste. Heat on medium high heat until flour turns brown. Add salt and pepper. Using a medium sized bowl fill with about 6 cups of milk and half cup evaporated milk. Pour into hot skillet with browned flour. Mix continuously as gravy thickens and starts to boil. Boil for several minutes until consistency desired. If gravy becomes to thick thin with more milk. Remove from heat when done. *When skillet is hot and flour is browning the skillet appears to be smoking. It's the flour smoking. It's important to add enough salt and pepper to this gravy to make it delectable.
