3 eggs
1/3 cup honey
1/2 dripped homemade SCD yogurt
2 cups dry curd cottage cheese
2 tsp pure vanilla extract (make sure no sugar)
1-2 tsp grated lemon rind (optional)

Directions:
Directions:
Place all ingredients in a blender or food processor with metal blade, putting eggs in first so that blender blades will turn freely. Blend until smooth, stopping if necessary every 15 seconds to scrape the sides of the container with the spatula and push ingredients down. Pour into a loaf pan or small square cake pan, with or without SCD crust. Bake in the oven at 350F for about 30 minutes or until edges are brown. Cool and refrigerate.
