3 (8-1/4 ounce) cans sliced pineapple slices (12 slices)
1/4 cup butter
3/4 cup brown sugar, packed
1/2 cup pecan halves
1/2 cup milk
1 cup plain flour
3/4 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup shortening
1 egg
Ice Cream or Whipped Cream, optional

Preheat oven to 350º. Drain pineapple. Reserve 2 Tablespoons of syrup. In heavy 10" skillet, melt butter over medium heat. Add brown sugar and stir until melted. Remove from heat. Arrange pineapple and nuts on top of sugar mixture.

In medium bowl, sift dry ingredients. Add shortening and milk. Beat 2 minutes at high speed. Add egg and reserved pineapple juice. Beat 2 minutes longer. Pour gently over pineapples. Bake 40-45 minutes. Let cool 5 minutes. Turn out on platter so that pineapple is on top. Serve while warm if ice cream or whipped cream, if desired.
