4-1/2 cups Raisin Bran cereal
1-1/2 cups sugar
2-1/2 cups plain flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2-1/2 teaspoons baking soda
2 egg beaters plus 2 egg whites OR 4 egg beaters
1/2 cup oil
1 pint buttermilk
1 cup raisins
1 cup pecans
1 teaspoon vanilla

Soak raisins in hot water and drain. Mix dry ingredients, then wet ingredients. Fill greased muffin tins 1/3 full. Bake at 325 for 15-20 minutes. May freeze. Makes 96 mini muffins.
