Tomatillo salsa:
Clean 3 tomatillo ( remove husk & stem) but leave them whole. Roast in broiler on high with 1 jalapeño, ½ onion, 2 cloves garlic. Roast and turn until charred (about 15 minutes).

Let cool then blend with juices. Also add a large handful of cilantro. Pour in bowl then add salt to taste.

Shredded Beef:

2 lbs beef (boneless stew meat)
Cook in crockpot with 2 cups beef broth. Cook several hours until tender and shreddable.
Remove from liquid and shred on plate.
In pan, heat some hot oil and sauté diced onion and garlic....add beef and cook until slightly browned. Add 2 cups of the broth and let the liquid evaporate.

If needed, add salt to taste.
Serve shredded beef topped with the tomatillo salsa on warmed tortilla.
