4 cups of cubed, leftover roast beef or chicken
4 potatoes peeled and cubed
1 onion cubed
1-2 stalks celery diced
Gravy from roast beef or cream sauce for chicken
1 can of mixed vegetables
Can of biscuits, homemade biscuits or frozen biscuits.
Cream sauce for chicken:
1½ teaspoon butter
1 onion
1 can cream of chicken soup
1 cup sour cream

Directions:
Directions:
Use left over roast beef or chicken, cubed, set aside. Boil onion, celery, and potatoes. Drain and season to taste with salt and pepper. Mix beef with beef gravy, potatoes, onion, and celery. Add a can of mixed vegetables. Pour into greased baking dish. Top with biscuits of choice and bake at 350º for 20 minutes or until biscuits are golden brown.
For Chicken Cream Sauce:
Melt butter, combine chicken, soup, sour cream, milk, drained boiled potatoes mixture, and can of mixed vegetables. Pour into prepared baking dish. Bake as above. Mom would make this frequently. Nothing was wasted. The main dish leftovers were used to make a different meal.
