Crust:
1 cup flour
½ tsp salt
1 stick butter
2 TBS sour cream

Onion mixture:
3 large sweet onions ( a skillet full)
3 TBS butter
1 tsp salt
2 eggs
1 cup sour cream
¼ tsp pepper
1 tsp salt

Directions:
Directions:
Preheat oven to 400º

For crust: Mix 1 cup flour and ½ tsp salt into a bowl then work in the butter by hand. Add 2 TBS sour cream. Roll and place into pie dish.

Filling: sauté sliced onions in the 3 TBS butter for 20 to 30 minutes. Do not brown! Stir in 1 tsp salt and put into pie plate.
Beat rest of the ingredients and pour over onions.

Bake at 400º for 10 minutes. Turn oven down to 350º and continue to bake for 20 minutes or until knife comes out clean.

Can be cooked, refrigerated, then reheated the next day.
