2 gallons water
1 and 1/4 cups kosher or canning salt
3 tablespoons minced garlic
1 tablespoon whole black peppercorns
1/4 cup Worcestershire sauce
1/3 cup brown sugar
1 diced onion
4 sprigs fresh thyme
1 sprig rosemary
1 bay leaf,
1 and 1/2 teaspoons whole allspice berries (optional)
20 pounds fresh whole turkey
1 stick butter
2 cups of dry white wine
cheesecloth

Directions:
Directions:
Stir all brining ingredients in pot and boil, then cool.
Place turkey in a Ziploc XL storage bag inside cooler.
Pour brining solution in, seal tightly. Cover with ice and brine for 2 days.
Rinse turkey and dry, placing breast side up on roasting pan.
Heat oven to 450 degrees.
Combine melted butter and wine in pan, then immerse cheesecloth.
Spread damp cheesecloth over turkey.
Cook in oven for 30 minutes.
Reduce to 350 degrees.
Cook turkey 2 and 1/2 hours, basting every 30 minutes.
Remove cheesecloth and cook about 1 more hour until nicely browned.
