1 lb. ground turkey sausage
1 small onion diced
1 1/2 t. Oregano dried
5 oz baby spinach
1 lb. frozen sweet potatoes
1 1/4 c. Shredded manchego
1/4 c. Pecorino grated
8 large eggs
2 1/2 c. Almond milk
2 t. Dijon mustard
1 1/2 t. Salt
1/4 t. Pepper
Red pepper flakes or hot sauce for serving

Oven 400
Night before slow cooker low 8hours
Saute sausage, onion, oregano.
Add spinach until wilted.
To slow cooker in casserole
Add the potatoes (not thawed), 1 cup cheese.
Mix eggs, milk, mustard, salt and pepper.
Add to casserole.
Top with cheese.
Slow cooker then oven for about 10-20minutes
Serve with red pepper or hot sauce.
