2 cups flour

3/4 cup sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup pecans, chopped (optional)

1 egg, beaten

1/4 cup oil

1 teaspoon freshly grated orange rind

1/2 cup orange juice

1/4 cup water

1 teaspoon vanilla

1 1/2 cups fresh rhubarb, finely chopped

Preheat oven to 350 F. In a large bowl, combine the dry ingredients. Mix remaining ingredients in another bowl until blended. Stir into flour mixture until just moistened. Spoon batter into a greased 20-centimetre round cake tin with the bottom lined with baking paper. Bake for one hour. Remove from oven and insert knife into centre. If still too wet, cover the top with foil and bake for a further 10 minutes. Rest in the pan for 10 minutes before removing to a wire rack to cool.

Make a cream cheese icing, spread and sprinkle icing with orange zest.
