"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1 cup dates 1/2 cup water 1 cup shredded raw apple 3/4 cup grapeseed oil 1/2 cup chopped walnuts or pecans 1/2 teaspoon salt 1 teaspoon vanilla 1/4 cup chopped dates 3 cups rolled oats
Preheat oven to 375º. Combine the 1 cup dates and 1/2 cup water in a saucepan with a lid. Bring to a boil and take off heat to soften for 10 minutes.
Mix all the other ingredients, mash the dates that have softened and add mixing well. Let stand for 10 minutes to absorb moisture. Beat briskly by hand. Drop from teaspoon onto ungreased cookie sheet. Bake for 25 minutes.
