Ingredients:  
Pastry for 2 crust pie
1/2 C chopped onion - optional
6 T butter
1/2 C flour
1 t salt
3 C cooked & cubed chicken
10 oz pkg. frozen peas & carrots
3-4 cooked & cubed potatoes

Directions:
Directions:
Melt butter, blend in flour & salt.
Add broth all at once. Cook & stir till thick & bubbly.
Add remaining ingredients.
Pour into unbaked pie shell.
Top with crust.
Bake at 400 degrees for 35-45 minutes until golden brown & filling bubbles.

*** Need to use a deep dish pan otherwise it bubbles over.
