Carolina Springs Chicken Recipe

Honey Mustard Marinade:
1/2 c. Dijon mustard
1/2 c. honey
1 t. vegetable oil
1/2 t. lemon juice

4 skinless/boneless chicken breasts
1 T. vegetable oil
2 c. sliced mushrooms
2 T. butter
8 slices bacon
1 c. jack cheese, grated
1 c. sharp cheddar cheese, grated
2 t. parsley, chopped

Marinate chicken for 3-5 hours. Save some honey mustard.

Saute mushrooms in butter.

Cook chicken in a large skillet with vegetable oil. 3-4 per side or until golden brown. Keep in pan. Brush on saved honey mustard (not the marinade), add mushrooms, bacon, and cheeses.

Bake 7-10 minutes or until cheese is melted and starting to bubble.
