2 ⅔ lbs fresh tomatoes, chopped and peeled
1⅓ medium onion, chopped
2⅔ cloves of garlic, chopped
1/4 cup of fresh basil, chopped
1/4 cup of olive oil
2/3 t. salt
3 sprigs of parsley
2/3 cup of sugar
2/3 grated parmesan cheese
1 whole carrot

Directions:
Directions:
Heat oil over medium heat
Add onion, basil, garlic, and salt
Saute until onion is tender (5 minutes)
Add other ingredients and heat to boil. Reduce heat and simmer uncovered for two hours, stirring often, until thickened.
Remove parsley and carrot.
