2 T. butter
12 oz. beef tenderloin cut into 3 oz medallions
2 t. black peppercorns
1/2 cup sliced mushrooms
3 T. pearl onions chopped
1/4 cup of brandy or white wine
1 T. dijon mustard
1 t. Worcestershire sauce
3/4 cup of beef stock
1/4 cup sour cream

Directions:
Directions:
Preheat oven to 350 degrees
Heat large skillet over medium heat. Add 1 T. of butter, heat until foamy
Season steak with salt and pepper.
Add to skillet to sear, only 1-2 minutes per side.
After cooking steaks, add onions to skillet, add butter, and cook until translucent
Add mushrooms and saute 1-2 minutes. Add wine and Worcestershire sauce, bring to boil. Stir in mustard, cook one more minute before adding stock. Add cream. Bring to just boil. Remove from heat. Top on steaks.
