2 pints cherry tomatoes 4 cloves garlic smashed 1/4 cup plus 2 Tbsp extra virgin olive oil 2 tsp fresh thyme leaves 1/2 cup Panko breadcrumbs 1/2 cup grated Parmesan cheese
Toss the tomatoes, garlic, 1/4 cup olive oil and the thyme in an oversized skillet. Cook over medium heat, until the tomatoes are soft, about 8 minutes. Preheat the broiler. Mix the remaining 2 Tbsp olive oil, the Panko and Parmesan in a small bowl. Sprinkle over the tomatoes and broil until golden - about 3 minutes.
